Fall Ribbon Salad
Fall Ribbon Salad
A Parmesan kale and carrot ribbon salad with citrus-ginger poached chicken — the bowl I make when I want dinner to feel considered.
Some evenings call for something beautiful in a bowl. Not complicated — considered. This is the salad I come back to when the week has been full: ribbons of carrot against dark lacinato kale, a dressing bright with lemon, lime, and fresh ginger, and caramelized pumpkin-spice peanuts that shatter like little jewels over the top. The chicken is poached low and slow in a broth of citrus, cinnamon, and cilantro, so tender it falls apart under two forks.
The trick is treating each element like a piece worth styling on its own. The peanuts get their own moment in the pan. The kale gets massaged until it softens and darkens. The chicken rests in its own aromatic bath. Then everything comes together — layered, not tossed into anonymity.
Citrus & Ginger Poached Chicken
Start here — the chicken rests while you build the salad.
- 2 lbs boneless, skinless chicken breasts
- 1 lemon, halved
- 1 lime, halved
- 1 cinnamon stick
- 4 garlic cloves, smashed
- 1 small bunch cilantro, stems included
- 1 onion, quartered
- 2 tablespoons fresh ginger, sliced into coins
- 1 tablespoon salt · 1 teaspoon black peppercorns
- 8 cups water, or enough to cover by an inch
- Fill a large pot with the water. Squeeze in the lemon and lime, then drop the spent halves into the pot — you want the juice and the oils from the peel. Add everything else except the chicken.
- Bring to a boil, then reduce to a gentle simmer for 10 minutes to let the aromatics infuse.
- Lower in the chicken. The surface should barely shimmer — never a rolling boil.
- Poach 12–15 minutes, until 165°F at the thickest point.
- Turn off the heat and let the chicken rest in the liquid for 10 minutes. Remove, rest 5 more minutes, then shred with two forks.
Parmesan Kale & Carrot Ribbon Salad
Serves four, generously.
For the salad and dressing:
- 1 lb lacinato kale, stemmed and thinly sliced
- 3 large carrots, shaved into ribbons with a peeler
- 1 lemon, juiced and zested · 1 lime, juiced
- 1 small shallot, minced · 1 teaspoon fresh ginger, grated
- ⅓ cup olive oil · 1 tablespoon honey · ½ teaspoon salt
- ½ cup finely grated Parmesan
- ⅓ cup dried cranberries · 4 dried figs, quartered
- Caramelize the peanuts: combine peanuts, sugar, water, spices, and salt in a skillet over medium heat. Stir constantly until the sugar melts and turns deep amber, 6–8 minutes. Spread on parchment, cool, break into clusters.
- Whisk the lemon juice and zest, lime juice, shallot, ginger, honey, and salt. Slowly whisk in the olive oil.
- Massage the kale with half the dressing for 2–3 minutes, until the leaves darken and soften.
- Add the carrot ribbons, cranberries, figs, and most of the Parmesan. Toss with remaining dressing to taste.
- Rest 10 minutes. Pile the shredded chicken on top, then finish with the peanut clusters and the last of the Parmesan.
Perfect for gifting!
Caramelized Pumpkin-Spice Peanuts
The jewelry of the dish — make a double batch, they keep for a week.
- 1 cup raw peanuts
- ¼ cup agave/vanilla
- 2 tablespoons water
- 1 teaspoon pumpkin pie spice
- ½ teaspoon cinnamon
- Pinch of salt
- Combine everything in a skillet over medium heat.
- Stir constantly until the sugar melts, coats the nuts, and turns deep amber, 6–8 minutes. Don't walk away — the line between amber and bitter is thin.
- Spread on parchment to cool completely, then break into clusters.
Dinner, like everything else, deserves to be curated.
